I have an Entity where the user can only update 5 of the 30 fields. In my Business View I have a transition to the GoldenHistoryRecords. I do not want to show all 30 fields when they transition to this view. Is there a way to assign a different collection to this history view?

Above reply was the quick and alternative solution And if you want to assign a different collection to the history you need to go to your stepper and add a collection step with new business entity and the collection in which you want the data needs to be shown as below.
This will allow you to show the records of your choice in the new transition
If you just want to show 5 fields of your choice you can select from the option wizard the list of columns you want to show.
